2 Cans of chick peas
1/2 Cup of tahini (Sesame seed paste)
1/4 Cup of olive oil
2 cloves of garlic, chopped or 1 head of
roasted
2 Tbsp lemon juice
1 tsp salt
Drain the chick peas, and save their juice. Put a can of chick peas, the garlic, tahini, lemon juice, oil and salt in a food processor. A blender can be used, but is a pain in the butt. Turn the food processor on, and add about 1/2 a cup of the reserved liquid. Slowly add the rest of the chick peas (and more liquid, to keep the mixture from getting too thick and not processing). When it's blended to a smooth paste, it's done. Scrape it out into a serving dish, drizzle with olive oil, garnish with mushrooms, more chick peas, or sliced veggies and serve.
It's good as a dip for chips or veggies, a spread (instead of mayo) on sandwitches, or as a filling for pita bread and chopped vegetables.
